Recipe for V's Mushrooms with Potatoes & Onions

Here is the recipe for V's Mushroom with Potatoes & Onions from Sumana Ray's "Indian Vegetarian Cooking" as promised in the previous post.

Ingredients:
5 tbsp oil
1 large potato, diced into 3/4 inch pcs
4 cardamoms
1 inch stick cinnamon
2 bay leaves
1 large onion, finely sliced
2 cloves garlic, crushed
3/4 in ginger, grated
1 tsp ground turmeric
1/2 tsp chili powder
1/2 tsp salt
a big pinch sugar
1 1/2 tsp white vinegar
8 oz mushrooms quartered

Method:
  1. Heat oil in a kadai over medium high heat. Add the potatoes & fry for 2-3 mins until light golden in color. Remove and set aside
  2. Add the cardamoms, cinnamon and bay leaves and let sizzle for a minute
  3. Add the onions, garlic, and ginger and fry for 4-5 mins
  4. Add the turmeric, chili, salt, sugar, and vinegar and fry, stirring continuously for another minute
  5. Add the mushrooms and potatoes to the spice mixture and mix
  6. Lower heat and cook for about 15 minutes until the potatoes are tender
V follows the recipe to the T using teaspoons and tablespoons for measurements, whereas I just eye-ball the proportions.

Another recipe of interest in the same book is "Masala Kaddu / Pumpkin with spices" which V has promised to make some other time.
