Ingredients:
5 tbsp oil
1 large potato, diced into 3/4 inch pcs
4 cardamoms
1 inch stick cinnamon
2 bay leaves
1 large onion, finely sliced
2 cloves garlic, crushed
3/4 in ginger, grated
1 tsp ground turmeric
1/2 tsp chili powder
1/2 tsp salt
a big pinch sugar
1 1/2 tsp white vinegar
8 oz mushrooms quartered
Method:
- Heat oil in a kadai over medium high heat. Add the potatoes & fry for 2-3 mins until light golden in color. Remove and set aside
- Add the cardamoms, cinnamon and bay leaves and let sizzle for a minute
- Add the onions, garlic, and ginger and fry for 4-5 mins
- Add the turmeric, chili, salt, sugar, and vinegar and fry, stirring continuously for another minute
- Add the mushrooms and potatoes to the spice mixture and mix
- Lower heat and cook for about 15 minutes until the potatoes are tender
